Apple Crumble Cake

This incredible Apple Crumble Cake is a most welcome addition to my table this week. As Autumn begins to wave at us from the back row my apple trees are weighty with beautiful Bramleys. So much so that I am almost swimming in apples and  feel heavily the responsibility of putting them quickly to the best use I can. I seem to be unable to keep up with the supply but remain earnest in my appley endeavours and this is simply one of the best ways that I know how.

This moist cake is a cake of many hats being perfect as a coffee cake or damn delicious as a warm pud with vanilla custard or cream. I love it as a Sunday Lunch pudding after a big meal. It is light but full of flavour just what you need when you can’t move for too many roast potatoes……

BUT FIRST SOME…….WET SUIT SHAME….

As a child I was about as shy as it gets. I was pretty much crippled with it until I hit about 20. Whether it was vodka or a strong friendship group that finally allowed me to speak for myself I know not but I still have to give myself a proverbial kick up the arse in stranger situations as I suppose most people do. So come this past weekend in North Wales with my little family I found myself quite mortified on a busy lay by in the rain.

In an effort to promote self confidence in our children and avoid a childhood of mumbling towards the floor we try to encourage thrilling outdoor activities that will empower and make our kids feel like mini Grizzly Adams. It is however not my natural comfort zone, oh so especially now that even a busy dual carriageway is enough to make me concentrate on my breathing… quite ridiculous…

So this is why I found myself at 9 a.m on a wet and windy Bank Holiday Monday being handed a sopping wet and very cold  wet suit in a grotty lay by.

I was incredulous as I walked back to our vehicle and also a little outraged… I wanted desperately to pivot on my cracked heels and demand a dry one but I knew I couldn’t cope with being exposed as a middle aged Nancy. The outdoor activities instructor was shouting instructions for us all to hurry up in order to catch the tide whilst wearing a full length towelling poncho/dress and flip flops. He was about as outdoorsy as it gets.

I just knew he would laugh in my face showering me in Kendal Mint Cake. Thankfully the children’s were dry otherwise I might well have wept. To make matters worse we were with two other families that were obviously free runners or Olympic skiers in their spare time. Their wet suits were on in an uninhibited trice whilst standing at the boot of their cars. I however attempted to pull mine on in the back of our steamed up van with my poor son next to me. He too is struck with the shyness gene and couldn’t face being looked on from the road.

What happened in the back of that van will stay with me for a very long time and I suspect my son feels the same….I can’t quite bring myself to broach it yet…at one point I actually fully fell on him crushing his little head against the door. He cried…well you would. It was horrific for both of us. God only knows what that van looked like from the outside.

We did eventually emerge clad appropriately but my poor son was scarred both physically and emotionally… the good thing is that by that point I didn’t give a flying flip what the hell I looked like… but as I passed the jaunty instructor I did so nearly reach out and rip that poncho right off from around his outdoorsy tendinous neck …

I admit I was glad to arrive home from our very damp weekend and even more glad to make use of the apples that had scattered upon my lawn anew. This softly spiced cake warmed me in places that I so needed to be warmed. Perfect. Someone put the heating on…

APPLE CRUMBLE CAKE RECIPE

This is a simple creamed cake recipe that I use for my similar Rhubarb Crumble Cake. I LOVE a Crumble Cake. All that buttery nubbleness on top is just so moreish and delicious.

First of all I make the crumble mix in my food processor with a quick whizz until it turns into rubble.

I cream the butter and sugar until pale in a free standing mixer.

Then whisk the eggs in one at a time followed by the flour, cinnamon and baking powder. I spread the batter in a lined tin. I use bakoglide that I have cut into the right shape for this tin. I do all my brownies, flapjacks and traybakes in it so it is permanently kept ready in my cupboard.

I then put 400 grams of my stewed apples on top and gently spread it out as evenly as possible. Followed by all the fabulous crumble.

Bake for 45 minutes until golden brown and begging to be snaffled whilst still warm.

This is a simple creamed cake recipe for Apple Crumble Cake that I use for my similar Rhubarb Crumble Cake. I LOVE a Crumble Cake. All that buttery nubbleness on top is just delicious.

Ingredients

Crumble Topping

  • 100 grams plain flour
  • 1/2 tsp baking powder
  • 75 grams butter cold
  • 75 grams caster sugar

Cake

  • 100 grams unsalted butter soft
  • 175 grams plain flour
  • 3 tbsps milk
  • 100 grams caster sugar
  • 1 heaped tsp baking powder
  • 1 1/2 tsp cinnamon
  • 2 large eggs

Stewed Apples

  • 400 grams stewed apples

Instructions

  1. Preheat the oven to 180 C.
  2. For the crumble topping- you could sift the flour and baking powder into a bowl and then rub in the butter with your fingers until breadcrumbs like before mixing in the sugar. I just blitz the lot in my food processor until sandy and rubbly – just keep whizzing. Place in the fridge to chill until you’re ready for it.
  3. For the cake-cream the butter until soft in a free standing mixer or with a hand held whisk. Add the sugar and whisk until pale and fluffy  .Beat in the eggs one at a time before sifting  the cinnamon, flour and baking powder into the bowl. Whisk until mixed through then add the milk and whisk again. You may need to add more milk to get it to a soft dropping consistency.
  4. I use an 8 inch loose bottomed square cake tin. It is a deep one though. A 9 ” would be the better bet if your tin is not a deep. Fill the tin with the cake batter as levelly as you can. Spread the apple mixture gently over the cake batter. Scatter the crumble mix all over and bake the cake for 45/50 minutes. Watch carefully at the end as the top can start to catch.
  5. Apply to Face with Blue Lips

Recipe Notes

If making the stewed Apples from scratch you would need 900 grams of apples, 25 grams of butter,1/2 tsp cinnamon, 4 tbsps water and about 50-90 grams of sugar depending on how tart your apples are.
